THE FIRST ASPARAGUS OF SPRING
After a long, grey winter, the arrival of British asparagus feels like the real start of the year.
When we first started out, we had this idea that everything had to be incredibly complicated to be good. But over time, the kitchen has naturally stripped things back. Now, it's about finding the best possible produce and doing as little to it as possible.
"The best cooking is mostly just great shopping. And knowing when to stop."
That approach relies heavily on the seasons. We can't force things. When the season is over, it's over. We pack it up, change the menu, and look forward to whatever is coming next. It keeps us on our toes, and it keeps the food feeling alive.
